Spumone, the king of ice creams 

Salento's tradition has given us an awesome dessert based on ice cream: the “Spumone”, also called “pezzo duro” (hard piece). Those who are not from Salento, or those who did not visit the region yet, will be really surprised from this cupola shaped ice-cream. Because it is not an ice-cream. It is a lot more. It is the King of ice-creams.

Its origins are not certain: for some it was born from the encounter of ice-cream makers from Napels with French chefs, for others it has its´ origins in Salento. What is absolutly known is that this typical sweet has spread throughout the South of Italy between the 60s and 70s of the last century. The Spumone will slowly be set aside in the Neapolitan tradition while remaining deeply rooted in Puglia and Salento in particular where it is still widespread and worn today. Spumone arrived in the States as well, where the love for this ice-cream is shown every year on the 21st f Agoust, during the National Spumoni Day.

Traditionally, the "hard piece" has a soft core made of sponge cake macerated in a liqueur (usually “la Strega”)) with harder layers of Hazelnut Ice cream, Chocolate, and Stracciatella, which form a small dome of pleasure.

We perfectly know that only a respectful innovation allows the tradition to stay alive.

Although we want to bring the spumone to today's days, we decided to continue strictly the traditional handicrafts and consequently the typical cupola shape deriving from the metal cups in which it is formed; we thought it was indispensable to safeguard the idea of making ice cream with other consistencies and other flavors, but we replaced the soft sponge cake with cream, jam or crispy and made it a naturally gluten-free dessert.

Our Spumoni have modern taste but their creamy consistency has not changed.

Only the thirty-year experience accompanied by a long phase of research and experimentation has made it possible to obtain absolutely creamy products that give the ice cream its most intense flavour by replacing the cow's milk with a vegetable bran or simply with water.

We wanted to add a story to what we do so that our product is not an indifferent commodity for producers' stories and consumer health so that it is not indifferent to the idea that it is possible to live differently without exploiting the world, animals and men.
Our dessert is good because it's tasty, because it's genuine, because it's ethical.
